Wine Bialoni – Georgian Wines & Spirit (GWS) - Produced from the Vardisubani vineyard, a micro-terroir situated at an altitude of 600 metres in an ancient riverbed (Kakheti wine region), the Bialoni Saperavi 2021 is a single-varietal wine made from an ancient Georgian grape variety renowned for its quality: Saperavi. Produced using traditional winemaking methods, this smooth, full-bodied wine combines ancestral expertise with modern techniques. Hand-harvested, the grapes macerate on their skins for one month in stainless steel vats, before ageing in French oak barrels (for 8 to 12 months). On the nose, it offers aromas of cherries and blackberries, enhanced by spicy, vanilla and woody notes. On the palate, it is supple and pleasant, structured by velvety, well-integrated tannins, leading to a long finish. An elegant and expressive wine, ideal for discovering the rich wine-growing culture of the Georgian terroir.
