Wine Domaine des Roches Neuves - Thierry Germain - One of the estate's greatest plot-based cuvées, grown on the clay-limestone soils that give this wine plenty of minerality. There has been not too much intervention - not even during vinification - to preserve the Cabernet's expression on this limestone terroir. Harvested into crates by hand, the grapes are sorted before being placed in vats on conveyor belts. Fermentation in Stoeckinger truncated-cone tanks at 16 to 24 degrees Celsius to extract maximum aroma and richness. Vatting from 10 to 18 days, 100% destemming. An elegant wine on the nose, with fruity aromas of cherry and strawberry. The palate is full and rich, with great elegance.
