Éclats de Côt 2023 - Domaine des Éclats

Wine Domaine des Éclats - Made from 46-year-old vines planted on sandy soils rich in flint, with a limestone subsoil, this Éclats de Côt expresses all the uniqueness of this historic grape variety from the Cher Valley. Grown organically, it reflects a sunny vintage, marked by beautifully ripe fruit. Vinified with precision, with a short fermentation followed by 12 months’ ageing in vats. This wine is produced without the addition of sulphites or filtration, in pursuit of purity and authenticity. The nose is expressive, with notes of black cherry and violet. On the palate, the texture is full-bodied and round, supported by a controlled structure that balances the natural power of the Côt. The whole remains lively, with a lovely energy that lingers on the palate. A red wine with character, both sincere and structured, which pairs equally well with meat dishes and more modern pairings such as a burger. Serve slightly chilled, at around 14–15°C, to reveal its full freshness.
