Wine Domaine Paul Janin et Fils - The Empreintes cuvée reflects a rigorous selection of plots within the estate’s vineyard, with particular attention paid to old vines and their ability to produce concentrated grapes. Paul and Éric Janin prioritise meticulous work in the vineyard, with controlled yields and hand-harvesting, to preserve the quality of the fruit. Vinification is carried out in the traditional manner, with tailored extraction to structure the wine without masking the expression of the terroir. Compared to a more classic Moulin-à-Vent cuvée from the estate, Empreintes offers greater concentration and a more assertive structure. The 2023 vintage develops aromas of black fruit, spicy notes and a slight floral dimension, with a dense palate and a lingering finish. This cuvée offers a deeper insight into the estate’s work and its terroirs.
