Wine Domaine Mondange - On the banks of the Fiumorbu, where the river slowly shapes the landscape, a rare stone from the heights of Ghisoni finds its place: azurite. It is from this natural singularity that Rocc’Azura is born, a white wine that is both pure and vibrant, marked by an elegant minerality and a luminous freshness. Made from Vermentinu meticulously cultivated on vines around twenty years old, this wine embodies a direct, unpretentious style, deeply rooted in eastern Corsica. Hand-harvested at dawn, then carefully vinified in stainless steel and tulip-shaped concrete vats, it develops a delicate texture and beautiful complexity after 12 months on fine lees. Rocc’Azura is a wine of character, free-spirited and sunny, designed for the table and shared moments: it pairs perfectly with a terrine, raw fish or a fine cheese. Serve between 10 and 12°C to reveal its full vitality
