Wine Domaine Mondange - On the banks of the Fiumorbu, azurite, a rare stone from Ghisoni, gives its name to this playful, sunny rosé. Rocc’Azura Rosé is light, playful and full of charm, ideal for long aperitifs and evenings with friends. Made from 100% Sciaccarellu, grown on 20-year-old vines, this wine is harvested by hand at dawn and vinified by direct pressing in stainless steel vats, with 9 months’ ageing on fine lees to reveal finesse, fruitiness and elegance. It pairs beautifully with raw vegetables, light charcuterie, croque-monsieurs or filled crêpes, bringing freshness and conviviality to the table.
