Each grape is sorted upon arrival of the harvest and the pressing is gentle to preserve optimal fruitiness. A blend of limestone, clay-limestone and flint soils. The limestone brings finesse, the clay-limestone brings fruit and richness, and the flint brings minerality. 100% indigenous yeasts and slow fermentation produce a wine of unique finesse and minerality, accompanied by acidity that is always extremely well integrated.
