Wine Springfield Estate - Springfield Estate's Wild Yeast is an unoaked Chardonnay, fermented exclusively with indigenous yeasts naturally present on the grape skins. This slow and spontaneous process, without intervention, reveals a pure and complex expression of the grape variety. Aged on lees for 10 months, it opens with a fragrant nose of lemon, hazelnut, peach and green apple, with a touch of stony minerality typical of the terroir. On the palate, the texture is full-bodied, with flavours of pear, citrus and stone fruit, and a salty, mineral and slightly creamy finish. A lively, sincere wine that focuses on the pure expression of the grape variety and terroir, to be enjoyed with seafood, Asian cuisine or grilled fish.
